Food hygiene training

There is a legal requirement for food businesses to ensure that food handlers are supervised, instructed and/or trained in food hygiene matters relevant to their work activity.

Staff preparing open, high risk foods or handle food must have training.  It is recommended that this is equivalent to the Chartered Institute of Environmental Health (CIEH) basic food hygiene certificate (level 2).  Supervisors or managers, especially if they are responsible for implementing the food safety management system, should have similar or more advanced training equivalent to the CIEH intermediate food hygiene certificate (level 3).
