There is a legal requirement for food businesses to ensure that food handlers are supervised, instructed and/or trained in food hygiene matters relevant to their work activity.
Staff preparing open, high risk foods or handling food must have training. It is recommended that this is equal to the Chartered Institute of Environmental Health (CIEH) basic food hygiene certificate (level 2). Supervisors or managers, especially if they are responsible for actioning the food safety management system, should have similar or more advanced training equivalent to the CIEH intermediate food hygiene certificate (level 3).
Lost certificates
If your training was through the CIEH and you have lost your certificate, you can obtain a copy by contacting the Chartered Institute of Environmental Health on 020 7827 5800 or 020 7928 6006. You will need to provide the date of the course and training centre details. There will be a charge for copies.
